  • Every food item is made up of ingredients that contain useful substances called nutrients.
  • The major nutrients in our food are: Carbohydrates, Proteins, Fats, Vitamins, and Minerals.
  • Food also contains Dietary Fibres (Roughage) and Water, which are equally important.

2. Tests for Nutrients — How to Detect Carbohydrates, Proteins, and Fats

  • We can test food items for the presence of carbohydrates (starch), proteins, and fats using simple chemical tests.
  • TEST FOR STARCH: Add 2-3 drops of dilute iodine solution to the food item. A blue-black colour indicates the presence of starch.
  • TEST FOR PROTEIN: Add 2 drops of copper sulphate solution and 10 drops of caustic soda solution to a food sample mixed with water. A violet colour indicates the presence of protein.

3. Functions of Nutrients — What Each Nutrient Does

  • CARBOHYDRATES: Mainly provide ENERGY to the body. Main carbohydrates in food are starch and sugars. Sources: rice, wheat, bread, potato, maize, sugar.
  • FATS: Also provide ENERGY. Fats give much MORE energy than the same amount of carbohydrates. Sources: butter, ghee, oil, nuts, meat. Both plant sources (oils, groundnut, coconut) and animal sources (g
  • PROTEINS: Needed for GROWTH and REPAIR of the body. Sources: milk, eggs, fish, meat, dal, pulses, soyabean.

4. Vitamins and Minerals — Types, Sources, and Functions

  • VITAMIN A: Keeps skin and eyes healthy. Sources: green leafy vegetables, carrots, eggs, fish, milk. Deficiency causes night blindness and loss of vision.
  • VITAMIN B1: Needed for energy release. Sources: whole grains, pulses, nuts. Deficiency causes Beriberi (weak muscles, very little energy).
