Introduction to Nutrition and Digestive System
- Nutrition is the sum of processes by which an organism consumes and utilizes food substances
- WHO defines nutrition as intake of food considered in relation to body's dietary needs
- Dietary needs include carbohydrates, proteins, fats, vitamins, minerals, water, and fiber

Alimentary Canal Structure
- Mouth (Buccal Cavity): Bounded by lips, cheeks, palate, and tongue with 32 teeth in adults
- Tooth structure: Crown (covered by enamel), neck, root (covered by cementum), pulp cavity with nerves and blood vessels
- Pharynx: Common passage for food and air, epiglottis prevents food entry into trachea

Histological Structure of Alimentary Canal
- Four basic layers from inside to outside: Mucosa, Submucosa, Muscularis, Serosa
- Serosa: Outermost layer with mesothelium and connective tissue
- Muscularis: Smooth muscles in three layers - longitudinal (outer), circular (middle), oblique (inner)

Digestive Glands
- Salivary Glands: Three pairs - parotid, submandibular, sublingual with serous and mucous cells
- Liver: Largest gland (1.2-1.5 kg), bilobed, covered by Glisson's capsule, made of hepatic lobules
- Liver functions: Bile production, glucose storage as glycogen, deamination, vitamin synthesis, detoxification
