- Food safety means assurance that food is acceptable for human consumption according to its intended use.
- Toxicity is the capacity of a substance to produce harm or injury under any conditions.
- Hazard is the relative probability that harm or injury will result when a substance is not used in a prescribed manner and quantity.
2. Food-borne illness: infection, intoxication, and infestation
- Food-borne illness can occur through infection, intoxication, or infestation.
- Food infection or food poisoning results from ingestion of live pathogenic organisms which multiply in the body and cause disease.
- Salmonella is the classic example of food infection or food poisoning.
3. Food standards, regulations, and certification in India
- Effective food standards and control systems are required to ensure hygienic, wholesome food and to facilitate trade within and between nations.
- There are four levels of standards: company, national, regional, and international.
- Company standards are prepared by a company for its own use and are normally copies of national standards.
4. International bodies: CAC, ISO, and WTO
- CAC stands for Codex Alimentarius Commission.
- CAC is an intergovernmental body formed to establish international standards to protect consumer health and facilitate food and agricultural trade.
- In 2017, the membership of Codex was 187 member countries and one Member Organisation, the European Community.
