  • Salmonella is the classic example of food infection or food poisoning.

  • Effective food standards and control systems are required to ensure hygienic, wholesome food and to facilitate trade within and between nations.
  • There are four levels of standards: company, national, regional, and international.
  • Company standards are prepared by a company for its own use and are normally copies of national standards.

4. International bodies: CAC, ISO, and WTO

  • CAC stands for Codex Alimentarius Commission.
  • CAC is an intergovernmental body formed to establish international standards to protect consumer health and facilitate food and agricultural trade.
  • In 2017, the membership of Codex was 187 member countries and one Member Organisation, the European Community.
