1. Basic ideas: nutrition, food, and diet

  • Nutrition is the supply of essential chemical compounds to the body.
  • Food is any substance eaten or drunk that contains nutrients.
  • Diet is the combination of food items eaten in meals.

2. Classes of nutrients

  • The six classes of food substances are carbohydrates, fats, proteins, mineral salts, vitamins, and water.
  • Carbohydrates and fats mainly provide energy.
  • Proteins are needed for growth and repair.

3. Carbohydrates: sugars, starch, cellulose, and glycogen

  • Carbohydrates are compounds of carbon, hydrogen, and oxygen with hydrogen and oxygen in the ratio 2:1.
  • Monosaccharides are simple sugars and have the general formula C6H12O6.
  • Glucose is the simplest and most common sugar and is called grape-sugar.

4. Fats, proteins, and energy value

  • Fats contain carbon, hydrogen, and oxygen, but with much less oxygen than carbohydrates.
  • One mole of fat releases 9.45 Kcal of energy, which is more than carbohydrates.
  • Fats store energy and also act as a solvent for fat-soluble vitamins.
