1. Meaning and Importance of Food Processing and Technology
- Food processing means converting raw ingredients into finished or semi-finished products by using methods and techniques.
- Food technology uses scientific, technical, social, and legal knowledge for the production, preservation, packaging, distribution, and safety of food.
- Food science studies the composition of food, changes during handling and storage, causes of spoilage, and the principles behind processing.
2. History and Development of Food Processing
- Food preservation began in prehistoric times with methods such as sun drying, controlled fermentation, salting, pickling, candying, roasting, smoking, baking, and using spices as preservatives.
- In 1810, Nicolas Appert developed the canning process.
- In 1864, Louis Pasteur studied spoilage of wine and described how to avoid spoilage.
3. Food Spoilage and Basic Preservation Principles
- Food deteriorates because of physical, chemical, and biological changes.
- Spoilage may cause off-flavours, bad texture, discoloration, loss of nutrients, and unsafe food.
- Food can be spoiled by pests, insects, unsuitable temperature, too much light, oxygen, moisture, microorganisms, chemicals, and naturally present enzymes.
4. Classes of Foods Based on Perishability
- Perishable foods spoil quickly within one or two days.
- Examples of perishable foods are milk, curds, fish, and meat.
- Semi perishable foods can last for 1-2 weeks.
